Charcoal Technique for the NK18K 01

Use a chimney starter for the 18" it heats exactly the right amount of coal quickly, no lighter fluid taste.

Half-and-half fire setup: coals on one side only. Direct heat for searing, indirect for slower cooking two zones in one small grill.

For the 18", use slightly less charcoal than the 22" about 60% of a full chimney reaches ideal grilling temperature without overloading the smaller bowl.

Both vents fully open = highest heat. Top vent halfway = ~180C. Adjust bottom vent for fine temperature control once up to temperature.

Add small wood chunks (coconut shell, mango) directly on glowing coals for authentic smoke flavour ideal for fish, chicken, and paneer.
