Neapolitan pizza is cooked at very high temperatures and in a short time. When the oven is fully heatsaturated at around 450C / 845F, pizzas can cook in as little as 4560 seconds. The Neapolitan Arch creates the airflow and heat retention needed to reach and maintain these conditions, helping you achieve authentic results with highhydration doughs.
By reducing the height of the oven aperture, the Neapolitan Arch keeps more heat inside the cooking chamber. This leads to quicker heatup times, increased fuel efficiency, and longer heat retention during hightemperature cooking sessions.
